Alfajores de Maicena
This recipe makes about 22 delicious alfajores. The perfect combination
of sweetness and texture.
Ingredients
- 150 grams of all-purpose flour
- 100 grams of cornstarch
- 3 egg yolks
- 150 grams of butter (at room temperature)
- 125 grams of sugar
- 7 grams of baking powder
- Vanilla extract
- Zest of 1 lemon (optional, balances sweetness)
- 350 grams of dulce de leche (for filling)
- Shredded coconut (optional, for rolling edges)
Procedure
- In a mixing bowl, combine the butter and sugar until creamy.

Add the egg yolks one at a time, followed by the vanilla extract and
lemon zest if using.

Mix in the dry ingredients until a dough forms. Wrap the dough in
plastic wrap and refrigerate for at least 2 hours (do not exceed 48
hours).

On a floured surface, roll out the dough. Use a round cutter to cut
out cookie shapes and place them on a buttered and floured baking
sheet.

Bake in a preheated 350°F oven for about 8 minutes, or until the
cookies turn a light beige color.

Once cool, sandwich two cookies with dulce de leche. Optionally, roll
the edges in shredded coconut.
