Procedure

  1. In a mixing bowl, combine the butter and sugar until creamy.
  2. Add the egg yolks one at a time, followed by the vanilla extract and lemon zest if using.
  3. Mix in the dry ingredients until a dough forms. Wrap the dough in plastic wrap and refrigerate for at least 2 hours (do not exceed 48 hours).
  4. On a floured surface, roll out the dough. Use a round cutter to cut out cookie shapes and place them on a buttered and floured baking sheet.
  5. Bake in a preheated 350°F oven for about 8 minutes, or until the cookies turn a light beige color.
  6. Once cool, sandwich two cookies with dulce de leche. Optionally, roll the edges in shredded coconut.
