Procedure

  1. In a bowl, combine softened butter, sugar, egg, lemon zest, and flour to make a dough. Avoid kneading or overworking it.
  2. Cover the dough and refrigerate for at least 20 minutes.
  3. On a floured surface, roll out the dough thinly and cut small circles for the alfajores. Place them on a baking sheet.
  4. Bake at 420°F (215°C) for 8-10 minutes or until lightly golden.
  5. Once cool, gently fill with dulce de leche. Note: These alfajores are delicate and may crack easily. Expect to make around 34 if you cut them small.
  6. Dust with powdered sugar if desired.
