Alfajores del Polo
A delicious, rich alfajor recipe inspired by Jimena Monteverde, with
tweaks for a balanced flavor and smaller size.
Ingredients
- 200 grams softened butter
- 100 grams sugar
- 1 egg
- Zest of half a lemon
- 300 grams all-purpose flour (plus extra for rolling)
- Dulce de leche (at least 350 grams)
- Powdered sugar for topping (optional)
Procedure

In a bowl, combine softened butter, sugar, egg, lemon zest, and flour
to make a dough. Avoid kneading or overworking it.
- Cover the dough and refrigerate for at least 20 minutes.

On a floured surface, roll out the dough thinly and cut small circles
for the alfajores. Place them on a baking sheet.
- Bake at 420°F (215°C) for 8-10 minutes or until lightly golden.

Once cool, gently fill with dulce de leche. Note: These alfajores are
delicate and may crack easily. Expect to make around 34 if you cut
them small.
- Dust with powdered sugar if desired.
