Ham & Cheese Quiche
This flavorful quiche combines a flaky homemade crust with a delicious
ham, cheese, and onion filling. Perfect for brunch or a savory snack.
Ingredients
Filling
- 1 onion (sweet onion, red onion, or 2 shallots work best)
- 4 slices of ham (or more, to taste)

Cheese (equal to ham quantity, plus 2 tbsp cream cheese; mix strong
and mild cheeses like goat cheese, mozzarella, and parmesan)
- 5 eggs (use more or fewer depending on desired texture)
- Salt, black pepper, nutmeg, and oregano
- Hot sauce (optional, for a spicy kick)

2 cups all-purpose flour (whole wheat also works but is less flaky)
- 1/4 cup vegetable oil (sunflower recommended)
- 1/2 cup boiling water
- Some cornstarch for rolling the dough
- Salt

Crust Preparation

In a large bowl, combine all crust ingredients. Form the dough,
avoiding extra flour, and use cornstarch for rolling.

Roll and fold the dough multiple times for flakiness: roll, fold into
thirds, roll again, fold into quarters, roll, and fold into thirds
again.

Place the rolled dough into a quiche or tart pan (metal pans create a
crispier crust).
Filling Preparation

Dice the onion and cook in a splash of oil until soft, about 15
minutes. Set aside to cool.
- Dice the ham and hard cheeses while the onion cools.

Combine the cooled onion, ham, cheeses (including cream cheese), and
eggs in a bowl. Add spices and hot sauce (if using) and mix well.
- Pour the filling into the prepared crust.
Baking
- Preheat the oven to 400°F (200°C).

Bake the quiche for at least 30 minutes or until the filling is set
and the top is golden.
