Crust Preparation

  1. In a large bowl, combine all crust ingredients. Form the dough, avoiding extra flour, and use cornstarch for rolling.
  2. Roll and fold the dough multiple times for flakiness: roll, fold into thirds, roll again, fold into quarters, roll, and fold into thirds again.
  3. Place the rolled dough into a quiche or tart pan (metal pans create a crispier crust).

Filling Preparation

  1. Dice the onion and cook in a splash of oil until soft, about 15 minutes. Set aside to cool.
  2. Dice the ham and hard cheeses while the onion cools.
  3. Combine the cooled onion, ham, cheeses (including cream cheese), and eggs in a bowl. Add spices and hot sauce (if using) and mix well.
  4. Pour the filling into the prepared crust.

Baking

  1. Preheat the oven to 400°F (200°C).
  2. Bake the quiche for at least 30 minutes or until the filling is set and the top is golden.
